Mace is the ground outer layer that covers the Nutmeg from the Nutmeg tree.  It adds a mild Nutmeg flavour to soups and sauces as well as vegetables and fish dishes.  It is also good in fresh cream, chocolate cake and sprinkled on hot chocolate!
