Juniper is the spicy, aromatic berry of the Juniper tree that grows wild in Eastern Europe. The berries, which are picked at maturity before being dried to conserve the essential oil, they contain can be used crushed or whole to flavour casseroles, marinades and stuffings and complement pork, rabbit, venison, beef and duck. They can also be used in sweet dishes such as fruitcake. Two to three berries are enough to give a woody note and they work well with Garlic, Rosemary and Oregano.
