Paprika has a Protected Designation of Origin (PDO).
Grown by hand in the Vera region in a geographically-limited area of around 50 villages, this fruit (a sort of large pepper) is harvested when ripe then slowly dried over a wood fire before being finely ground. This specific way of drying gives a delicate smoked taste.
Used a lot in Spanish charcuterie, Smoke Paprika adds a smoked touch to chicken, veal, pork, barbecued meat and roast potatoes.
